One of the quiet pleasures of staying at Wern is having a private fishing lake to yourselves. Pont Faen Fishery sits in a beautiful spot on the estate, with mountain views and a stillness that makes it hard to leave. The lake is stocked with Brown Trout, Rainbow Trout, Blue Trout, and Tiger Trout, and is reserved exclusively for guests of our cottages — it is not open to the public.

Fishing is managed by Dyfed Owen and can be arranged for an additional cost. Please note this is a farm-to-table fishery: fish are not returned to the lake.

Simple Fish Recipe

Ingredients:

  • Olive Oil

  • Two Small Trout

  • One sliced lemon

  • Four sprigs of fresh parsley

  • Salt and freshly ground black pepper

Instructions:

  1. Heat the oven to 205 degrees and cut two sheets of foil (larger than your fish).

  2. Place the Trout skin-side down on each piece of foil. Lightly oil both sides with oil. Season both sides. Place two springs of parsley and two lemon slices down the middle of each fish.

  3. Fold the foil, crimping the edges to make a packet

  4. Place the packet on a baking sheet and bake for 10 - 15 mins.

  5. Place each packet on a warm plate. Carefully open the foil packets (take care of the hot steam). Slide onto the plate and pour the cooking juices over the fish.

Baked whole fish on aluminum foil with lemon slices and herbs, on a woven placemat.
